Join Yuko Yanagidaira for a class on simple and nutritious Japanese comfort foods. Yuko will show us how to prepare two kinds of miso soup – one vegetarian and the other with thinly sliced pork. Both will be full of seasonal vegetables, mushrooms, and seaweeds. She will also show us to make onigiri (rice balls) with umeboshi (pickled ume plums). Finally, she will demonstrate tsukemono (quick pickled vegetables). Yuko grew up in Japan and recently relocated to Vermont. She is passionate about traditional Japanese food, the health benefits of fermentations like miso and pickles, and using locally grown produce in cooking.
