There’s nothing like the taste of ripe, local tomatoes in the wintertime. With this class on canning crushed tomatoes, Robin Berger demonstrates her favorite late-summer project for preserving the harvest. Crushed tomatoes are versatile enough to be used all winter in soups, stews, tomato sauces, and more and, since they are cooked down slightly, they are quick and convenient.
