Taking It To The Streets: Recipe Roundup
From Arts Riot’s ever-growing Food Truck stop on Friday evenings, Summervale gatherings, and food carts dotted along Church St., finger-licking, hand-held street foods are a summertime staple. I’m talking about sliders and tacos, popcorn and fizzy drinks, and tempura-fried broccoli and southern-style chicken….Wrap it up tight and try not to spill as you take it to go or linger with friends.
To bring the flavors of summer home, I decided to try out some street-inspired recipes. Here’s the round-up of a few of my favorites.
Parmesan Zucchini Fries
Crusted in parmesan and served with creamy dip, these zucchini fries are an absolute win! I used parchment paper wrapped in a cone shape to make them fun to serve. If you make too many, don’t fret. They will re-crisp when toasted or broiled after being in the fridge overnight.
Mexican Street Corn
Also known as elotes, Mexican street corn is a popular treat to eat on the go. I like grilling the corn on the cob so I can soak up a little extra Vitamin D and give my poor oven a break. Plus, you just can’t beat the flavor. Turn up the flavor with creamy, spicy, garlicy mayo, chipotle pepper, freshly crumbled cotija cheese, herby cilantro, and zesty lime. To turn it into a fun lunch option, cut the dressed corn off its cob onto a salad with avocado and your favorite protein.
Spicy Fruit Skewers
Thank goodness for the Bulk bins, because my stash of chipotle pepper clearly needs to be replenished! A simple two-ingredient snack is surprisingly delightful. Slice up skewers of mango (or pineapple!) and sprinkle with spice to how you like it.
Fish Tacos
What would an ode to street food be if I didn’t bring up tacos? (Should we taco ‘bout it?) … Try this recipe for a citrus kick! To serve them truly street-style, use two tortillas and top your tacos with radishes, onions, and cilantro.
