What do you do with those leftover hardboiled eggs from Easter?

On Saturday, I went to the Burlington Winter Farmer's Market with a City Market activity table (we're a sponsor of the Burlington Winter Farmer's Market, so we do a seasonal tasting/activity each month). I brought 5 dozen hardboiled eggs from Flower Power farm - they were beautiful blue and brown eggs - and a few different natural dyes made from boiled beets, blueberries, turmeric, and onion skins. Kids had a blast dying the eggs, and of course eating them afterwards!

Later, I had about 10 hardboiled eggs left in the cooler and the rest of the dyes, so I brought them home to dye for our Easter breakfast.
If you're like our family, after the eggs do their job decorating the table, not very many get eaten. So I peeled and dropped them in the pickling liquid from the lacto-fermented watermelon radishes and carrots. 24 hours later, they were pretty and pink.
