Tzatziki

Recipe by Anna Mays, taught in City Market’s Yogurt Making Class.

A refreshing yogurt-based Greek sauce and dip eaten with pita, vegetables, rice or meat.

Ingredients

1 cup yogurt (full-fat)
1 cucumber (english, seeded, finely grated and drained)
2 garlic (cloves, finely minced)
1 teaspoon lemon zest (plus 1 tbsp fresh lemon juice)
2 tablespoons dill, fresh (chopped)
  salt
  black pepper (freshly cracked)

Instructions

In a medium bowl, whisk together the yogurt, cucumber, garlic, lemon zest, lemon juice and dill. Season with salt and pepper. Chill.

For extra flavor, add some olive oil and some coarsely chopped fresh mint. Serve with crudités or with falafel and pita.
