Peach-Jalapeño Salsa

When brainstorming substitutes for tomatoes in our salsa, we landed on peaches. Peaches are ripe in the middle of summer and have the same great sweet-acidic balance of flavors as tomatoes. Plus, peaches are versatile and work in savory and sweet applications. Case in point is this salsa, which gets a good kick from jalapeo and pleasant, refreshing bite from lots of fresh lime juice and chopped cucumber. Ingredients

4 peach
1⁄2 cucumber, English
1 pepper, jalapeño
1⁄4 cup cilantro
1⁄2 teaspoon salt
  lime zest (from one lime)
  lime juice (from one lime)

Instructions

Combine peaches, cucumber, jalapeño, lime zest and juice, cilantro and salt in a medium bowl. Toss gently to combine. Let sit, refrigerated, for 30 minutes. Adjust seasoning with salt and lime juice and serve.
