Peach-Jalapeño Salsa
When brainstorming substitutes for tomatoes in our salsa, we landed on peaches. Peaches are ripe in the middle of summer and have the same great sweet-acidic balance of flavors as tomatoes. Plus, peaches are versatile and work in savory and sweet applications. Case in point is this salsa, which gets a good kick from jalapeo and pleasant, refreshing bite from lots of fresh lime juice and chopped cucumber. Try on Vegetarian Bean & Kale Tacos or Chipotle Pork Tacos.
