Hot Pepper Honey

Roughly chop the dried chipotle peppers. (You can use other dried peppers; chipotle tend to have a slightly smoky flavor that pairs nicely with a floral honey). Keep the seeds for a faster infusion and a spicier outcome. Discard the seeds if you prefer a mild flavor. Put the peppers in the bottom of the glass jar and pour the warm honey over the peppers. Seal the jar. Let the infusion sit in the cupboard for at least 5 days, longer for a stronger flavor. When ready to use, either strain out the peppers and seeds, or keep in the jar for more texture and spice. Honey is a natural preservative, so this will keep well.
